I don't mind cooking, and we like to try new foods. When your almost 3 year old says while eating, "this is yummy food", we know we have a winner. The whole family liked it, so I decided to post the recipe. I think that I got this recipe from my Aunt Susan a while ago. If you like squash, you'll probably like this, too.
Dinner in a Pumpkin
1 pumpkin (about 4lbs, seeds and stuff scraped out)
1 1/2 lbs ground beef (I actually used ground turkey sausage)
1/3 cup chopped green pepper
3/4 cup chopped celery
3/4 cup chopped onion
1 tsp salt
1/4 tsp pepper
2 tsp soy sauce
2 TBSP brown sugar
1-4oz can mushrooms
1 can cream of mushroom soup
2 cups cooked rice
Preheat oven to 350 degrees. Brown ground beef;add peppers, celery, onion, and cook until soft. Add the rest of the ingredients. Mix well and put into pumpkin. Put top on pumpkin. Place on foil lined cookie sheet and bake for 1 1/2 hours. To serve, scoop out pumpkin along with meat mixture.

ohhh, that looks so yummy but you know me...I will NEVER make that--so come visit and make it for me okay:)
I was just wondering what I was going to fix for dinner later this week. We'll have to try it - looks good. I like the music. I remember a time when country music wasn't your thing and then you landed in Rexburg... !)
