1st place Chili

Our ward had a ward chili cook off. It started as an Elder's quorum and High Priest activity and turned into a ward party. The men were the ones who were supposed to cook the chili since it was their activity. Spalding wanted to cook up a creamy white chili that he had at a soup luncheon on campus. It is Sue Clark's recipe. (She is the campus president's wife) We both contributed to the cooking and our chili won first place in the people's choice category. So here is the recipe. It is delicious!

Creamy White Chili
serves 7

1 lb boneless skinless chicken breasts, cut into 1/2 inch cubes
1 medium onion, chopped
1 1/2 tsp garlic powder
1 TBSP vegetable oil
2 cans (15 1/2 oz each) great northern beans
1 can (14 1/2 oz ) chicken broth
2 cans (4 oz each) chopped green chilies
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream

In a large saucepan, saute chicken, onion, and garlic powder in iol until chicken is no longer pink. Add beans, broth, chilies, and seasonings. Bring to boil. Reduce heat; simmer, uncovered, for 30 minutes. Remove from heat; stir in sour cream and cream. Serve immediately.
